Grilled salmon with fresh summer salsa is a feast for the eyes – and a healthy feast for the stomach! What makes this recipe so good is the salsa. If you haven’t had salsa with mango, you’re in for a treat.

The fact is, salsa can be traced back thousands of years to the Aztecs, Incas, and Mayans. However, the rest of the world didn’t “discover” this tasty dish until the 1500s when the Spaniards conquered Mexico. Since then, salsa has taken on a life of it’s own. You can find salsa in virtually every country around the world now. This sauce is used as a condiment in everything you can think of including vegetables, grilled fish and meat, appetizers – you name it!

Whether they are raw or cooked, smooth or full of chunky goodness, salsa is delicious! This recipe is a raw salsa made sweet by the mango and red pepper. The perfect complement to grilled salmon!

Yield: 8 Servings

Total Time:  1 Hour 45 Minutes

Prep Time: 30 Minutes

Cook Time: 1 Hour 15 Minutes

Ingredients

8 (6-ounce each) salmon fillets
2 tablespoons olive oil
2 tablespoons fresh lime juice
1 teaspoon sea salt
1 teaspoon black pepper

Fresh Summer Salsa

1 red bell pepper, diced
1 yellow bell pepper, diced
1 avocado, peeled, diced
1 cup diced tomatoes
1 medium mango, diced
1 red onion, diced
1/2 cup chopped fresh cilantro
1/2 teaspoon sea salt
1/4 cup fresh lime juice

Directions

In a small bowl, mix olive oil, lime juice, sea salt, and black pepper. Brush over the fish fillets and let marinate for at least 30 minutes.

Meanwhile, in a large bowl, combine mix all the salsa ingredients until well combined, drizzle with fresh lime juice and season with sea salt. Set aside.

Preheat your outdoor grill to medium-high. Grill the salmon fillets for about 4 minutes per side or until cooked through and golden on the outside.

Serve grilled salmon with fresh summer salsa on top. Enjoy!
